INTRODUCTION.

THAT the principal part of human food is derived from the vegetable kingdom is a fact which requires no proof. Corn and fruit, herbs and roots, and the refreshing and wholesome beverages extracted from these gifts of Providence, are matters of every day's enjoyment. Vegetable diet is

conducive to health. A constant use of animal food would rather impair than improve the human frame; and it has been satisfactorily proved, that farinaceous vegetable matter will sustain the life of man in perfect health longer than the richest animal aliment.

In general we find that every different climate has its peculiar vegetation; and notwithstanding the continual migrations of mankind have a tendency to equalize the distribution of vegetable
